It's funny how the most simple desserts are the best ones. Any time we have visitors over for dinner, I always make this for them. It is fast and yummy, just the way I like it.
ECLAIR CAKE
1 Cup of Water
½ Cup Butter
1 Cup of flour
4 Eggs
½ teaspoon of salt
1 Large Pkg. Instant Chocolate pudding
8oz. Cool Whip or Whipping Cream
Hershey's chocolate syrup
In a saucepan bring butter and water to a rolling boil. Remove from heat and stir in flour and salt until mixture forms a ball. Beat in eggs one at a time, the mixture should be smooth. Pour onto a greased jelly roll pan. bake at 400 degrees for 15-20 minutes or until golden brown. You may need to poke the crust with a fork after 10 minutes if it begins to bubble. After crust has cooled down, top with chocolate pudding and then top with cool whip. Drizzle with chocolate syrup.
